Serves: 12
  • For Muffins:
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 3 small eggs (or 2 large)
  • 1 cup yogurt (Noosa Honey Yogurt is yummy!)
  • ½ cup vegetable oil
  • 1 cup sugar
  • 2½ cups blueberries (fresh is better, but frozen is good too)
  • For Streusel Topping:
  • ½ cup sugar
  • ⅓ cup flour
  • ½ teaspoon ground cinnamon
  • splash of vanilla extract {optional}
  • ¼ cup cold butter
  1. Preheat oven to 375 degrees and line muffin pan with standard paper liners or silicone liners (link in post)
  2. For Streusel Crumb Topping: In a small bowl, combine sugar, flour, cinnamon, and vanilla. Cut in butter until crumbly.
  3. To make muffins: In a large bowl, combine flour, baking powder, and salt. Set aside.
  4. In another bowl, whisk eggs and sugar until well combined. Whisk in yogurt, oil, and vanilla extract.
  5. Sprinkle a small amount of flour to your blueberries before adding them to the batter. Add gently to batter and stir easily.
  6. Spoon the batter into your muffin pan, filling each cup about ⅔ of the way. If you have any extra blueberries, add them to the top, and then add streusel topping to each muffin. {If you don't want streusel, no need to add it. It's completely optional}
  7. Bake at 375 for about 18-22 minutes. Check the center of the muffins and make sure toothpick comes out clean.
  8. Cool for a few minutes before removing from pan.
  9. Eat and Enjoy
